MEYER LEMON FUSED OLIVE OIL
Fresh Meyer lemons and premium olives are crushed together at the mill, creating an exceptionally bright citrus olive oil in which the lemon is part of the oil from the very beginning—not a flavor simply added afterward.
Made using a traditional whole-fruit co-crushing technique often associated with Italian agrumato-style oils, ripe Meyer lemons are milled simultaneously with fresh olives using cold mechanical extraction. This demanding process requires careful timing: fresh fruit and olives must arrive at the mill together at just the right stage of ripeness.
Crushing the whole lemons releases their naturally fragrant citrus oils along with the juice and fruit, allowing them to become integrated with the olive oil during extraction. The result is vibrant and aromatic, with the floral sweetness and fresh citrus character that distinguish Meyer lemon from conventional lemon.
FROM GRILL TO TABLE
Drizzle over grilled fish, shrimp, scallops, or pan-seared chicken. Finish roasted asparagus, broccoli, green beans, or other seasonal vegetables. Toss with angel hair pasta, fresh herbs, and Parmesan, or use it to brighten risotto just before serving.
It also makes an exceptional vinaigrette, dipping oil, or finishing oil for arugula and other leafy greens. Try it over fresh bread, soft cheeses, or even in recipes where olive oil and citrus can bring an unexpected dimension to baked goods.
WHAT MAKES A FUSED OIL DIFFERENT
Unlike an infused oil, where flavor is introduced after the olive oil has already been produced, a true fused oil begins at the mill. Fresh Meyer lemons and olives are co-crushed together, allowing the natural citrus character to become an integral part of the finished oil.
It is a more demanding process, requiring fresh produce and olives to be coordinated at harvest and milled together rather than flavoring an already-finished oil.

Meyer Lemon Fused Olive Oil + Baklouti Green Chili Olive Oil
One of my favorites for this collection. Fresh citrus brightens the distinctive green-chili heat of Baklouti pepper. Excellent over grilled fish, shrimp, chicken, roasted vegetables, tacos, grain bowls, or even avocado. Adjust the ratio depending on how much heat you want.
Meyer Lemon Fused Olive Oil + Japanese Toasted Sesame Oil
Citrus and toasted sesame create an unexpected savory pairing for grilled seafood, noodles, cabbage slaws, rice bowls, and vegetables. Use the toasted sesame oil more sparingly so the Meyer lemon remains fresh and bright.
